Snow Peas
Snow peas are such little bundles of goodness. They contain a big range of vitamins and minerals, including calcium (25mg/100g), iron (0.9mg/100g), magnesium (36mg/100g), potassium (420mg/100g), zinc (0.6mg/100g), beta carotene (255ug/100g), vitamin C (46mg/100g), vitamin E (0.05mg/100g), folate (14ug/100g), plus a number of the B’s (B1-B7 inclusive). It’s getting a little bit too warm for them in our garden now but they really flourished in the cooler months, and we decided we are definitely going to increase our plantings of it next year as we had so much fun with them. Aside from the excitement of constantly finding something to pick off the stem and snack on while we were out in the yard, I also really enjoyed discovering new ways to incorporate them in our meal and snack times.
Here are a couple of recipes that have been a hit for our family.
Snow Pea, Cucumber, Garden Pea and Avocado Salad
Ingredients:
Salad
2 cups snow peas, halved
1 continental cucumber, diced
1.5 cups garden peas, defrosted
1 avocado, sliced
Handful of mint
Dressing
2 tbsps balsamic vinegar
1 tbsp maple syrup
1 tbsp lemon juice
Directions:
Add all the salad ingredients (minus the avocado) to a salad bowl and mix together well.
Layer avocado on top of the other ingredients
Mix together dressing ingredients and pour over the salad
Crunchy Snow Pea Dip
Ingredients:
1.5 cups snow peas
1/2 onion
1 tbsp oil
1/3 cup vegan Parmesan (any Parmesan would work here but I usually use this one from Minimalist Baker
1/4 cup oil
Mint
Directions:
Sauté the snow peas first with half an onion and a dash of oil until softened
Place snow peas and all other ingredients in your blender and press start!
Delicious as a dip or spread out on some crunchy sourdough
