When life gives you lemons … make lemon muffins, lemon bliss balls and lemon tea 🍋🍋🍋
Lemon juice contains: Vitamin C (48mg/100ml) ; Calcium (21mg/100ml); Potassium (126mg/100ml) ; Magnesium (9mg/100ml) ; Iron (0.32mg/100ml)
As the recommended daily intake of vitamin C for adults is 45mg/day, 100mL gives close to this in one hit so would be fantastic for boosting your immunity.
The recommended daily intake for calcium is much higher at around 1000mg/ day for adults (higher for women > 50 and men >70) so you won’t be hitting your RDI drinking lemon juice but it will still help in getting you closer.

The easiest way to get your daily dose of lemons would probably be with a freshly squeezed lemon in water. I’ve been loving mine as a tea which has been perfect to warm me up on these cold mornings and nights. I’ve also been a little bit more creative lately as our lemon tree has been very generous this month and we have had heaps of lemons, including one huge one weighing 540g which I have included a photo of below. Keep reading for a couple of lemon based recipes that have been popular in our house:
Lemon Bliss Balls
2 cups desiccated coconut
Juice and zest of two lemons
8 medjool dates
1/4 teaspoon salt
-Blend all ingredients in a food processor until well combined and mixture is sticking together
-Use hands to mould into balls
-Place in the fridge to set
Lemon Muffins
1/3 cup maple syrup
3 x chia seed eggs (3 tablespoons of chia
seeds with 6 tablespoons of water, left to sit for 5 minutes)
1/2 cup of milk of your choice
Juice and zest of two lemons
1 tablespoon melted coconut oil
3 cups almond meal
1 teaspoon bicarbonate soda
-Preheat oven to 175 deg C
-Add all ingredients to a bowl in the order listed
-Bake for 25-30 minutes if making large muffins or 15-20 minutes if making small muffins or until top is golden brown and cooked through
-Allow to sit for 10 minutes before removing from muffin tray
